Akibatnya bawangmerah mudah busuk, meski ayah 4 anak itu menerapkan teknik pengasapan. Ia membakar kayu di bawah rak-rak penyimpan umbi anggota famili Liliaceae itu. Untuk mencegah bawang merah terbakar, Kusriyanto melapisi rak-rak dengan seng. Upaya itu gagal menekan tingkat kerusakan umbi. Pada musim hujan, Kusriyanto memanen 7-8 ton bawangmerah per hektar. Dalam setahun ia 3 kali panen. Sebelum dijual ke pasar, umbi bawang itu biasa disimpan di dalam gudang selama 2-2,5 bulan. Ganda Selama masa penyimpanan itulah kerusakan umbi lapis Alium cepa itu cepat terjadi. Kerusakan 40% itu sangat signifikan. Jika volume penyimpanan 8 ton, 40% setara 3,2 ton. Saat ini harga bawangmerah Rp5.000 per kg sehingga kerugian pekebun mencapai Rp16-juta. Padahal dalam setahun ia 3 kali panen bawangmerah. Keruan saja potensi kerugian kian besar, Rp48-juta. Kerusakan umbi seperti pengalaman Kusriyanto itu jamak dialami para pekebun bawangmerah lain di berbagai sentra. Setahun terakhir, Kusriyanto memanfaatkan penyimpan instore drying. Bentuknya berupa bangunan berukuran 7,5 m x 5 m x 3 m berlantai semen. Dinding bagian bawah setinggi 1 m tersusun dari batu bata; bagian atas, bilik bambu. Di dalamnya terdapat 4 rak bambu setinggi 2,8 m, tempat bawang ditidurkan. Ruangan itu mampu menampung 16,5 ton bawangmerah. Dari luar, bentuk rumah penyimpanan itu persis rumah biasa. Bedanya atap yang digunakan terbuat dari fiber, di atasnya terdapat 4 unit ballwind atau pengatur sirkulasi udara yang terus berputar. Pada bagian samping terdapat tungku pembakaran yang terhubung dengan bagian dalam ruang penyimpanan. Dengan bantuan blower, panas dan asap hasil pembakaran biomassa mengalir ke dalam ruangan. Bahan bakar yang digunakan berupa sekam atau kayu bakar. Pembakaran terutama dilakukan saat musim hujan. Tujuannya untuk meningkatkan suhu ruangan. Bila menggunakan sekam, dibutuhkan 20 kg per jam. Asap pembakaran mengandung fenol dan karbonil turut mengawetkan bawangmerah. Sejak menggunakan ruang penyimpan itu tingkat kerusakan turun menjadi 25% atau 2 ton. Artinya dalam setahun Kusriyanto mengurangi kerugian Rp18-juta akibat kerusakan penyimpanan. Menurut Ir Sigit Nugraha, peneliti di Balai Besar Pascapanen, Bogor, dengan teknik ruang penyimpanan itu suhu dalam ruang dapat mencapai 38-48oC. Kualitas bawangmerah cukup baik, berkadar air rata-rata 13% dan warna merah mengkilap. Tanpa jemur Karena menggunakan atap fiber, saat musim kemarau ruang penyimpanan sekaligus bisa berfungsi sebagai tempat pengeringan. Usai panen, pekebun dapat langsung menyimpan bawang merah di ruang itu. Untuk mengeringkan 8 ton bawangmerah diperlukan waktu pengeringan selama 10 jam. Itu sebuah penghematan besar bagi pekebun. Bayangkan untuk mengeringkan 8 ton bawangmerah pada musim kemarau diperlukan 2 tenaga kerja selama 10 hari. Penjemuran saat musim hujan selama 15 hari. Dengan biaya Rp14.000 per orang per hari, Kusriyanto menghabiskan Rp280.000 untuk menjemur 8 ton bawangmerah. Menurut Sigit Nugraha yang merancang ruang penyimpan itu, investasi untuk membangun ruang penyimpan berkapasitas 15-20 ton mencapai Rp60-juta. Umur ekonomis bangunan 10 tahun. Investasi itu relatif murah ketimbang potensi kehilangan hasil akibat pembusukan umbi bawangmerah. Bandingkan dengan tingkat kerusakan 40% setara Rp48-juta per tahun dari 3 kali penyimpanan. Selain bisa menyimpan hasil panen sendiri, Kusriyanto sekarang juga membeli bawangmerah dari pekebun lain. Bawang itu ia simpan lalu dijual ketika harga naik. Pada Agustus 2008 misalnya, kelahiran Brebes 1945 itu membeli 15 ton bawangmerah dengan harga Rp2.400 per kg. Dua bulan kemudian dijual Rp6.500 per kg. Dengan tingkat kerusakan 25%, Kusriyanto meraup untung Rp37,125-juta. Dulu ketika masih menggunakan metoda penyimpanan yang lama-kerusakan 40%-keuntungan seperti itu mustahil diperoleh oleh Kusriyanto. Menurut Sigit selain untuk penyimpanan dan pengeringan bawangmerah, ruangan itu juga bisa dimanfaatkan sebagai penyimpan dan pengering komoditas pertanian lain seperti kedelai sehingga bisa digunakan untuk multikomoditas.
